Vanilla Roasted Chickpeas

The first time I ever had roasted chickpeas was when I was in culinary school. They are one of my all time favorite snacks. They remind me a lot of roasted peanuts, but with less fat and not a greasy. I know fat is not bad, but I do like that these Vanilla Roasted Chickpeas are loaded with protein and I feel like I can get away with snacking on more of them without over indulging on unhealthy fats. It’s summer time and we are constantly on the go. My family is running a lot more this time of year too, so I really love to roast up a big batch of these so we can grab a healthy snack to keep us fueled for our outdoor adventures. These also come together super fast and are easy to bake off while you’re doing other things around the house. What more could you ask for? Healthy, quick, crunchy, and slightly sweet. I really love having treats like this in the house for my boys. I will warn you though . . . they go fast. We really love the vanilla flavor, but you could also use the chai and chocolate protein powders too! I hope you enjoy these as much as we do!

Vanilla Roasted Chickpeas

Combine everything and spread the chickpeas out on a parchment lined baking sheet. Roast the chickpeas in a 375°F oven for one hour, stirring every 15 minutes.
