Test Kitchen: Brownies made with Almond Meal Flour

Brownies are a certain delight in any household. While trying to come up with new ways of using our Almond Meal Flour, we discovered it can make some great brownies. The bonus about this experiment is that we not only came across a wonderful tasting brownie, but it is gluten free as well!

Almond Brownies

½ cup Butter, melted
½ cup Cocoa Powder
1 cup Evaporated Cane Juice
2 Eggs
1 tsp Vanilla
2 Tb Cornstarch
½ cup Almond Meal
½ tsp Baking Powder
¼ tsp Salt

Preheat oven to 350°F. Grease a 9-inch square pan; set aside. Combine the melted butter and cocoa, stirring to combine. Add sugar, eggs and vanilla and beat until smooth. Add flour, cornstarch, baking powder and salt and mix to combine. Spread into the baking pan and bake 30 minutes. Makes 9- 1 x 1″ brownies

a have a question about the amount of the ingredients: in my computer appears an A with a hat before the ingredients that come in fractions… is that an error with the keyboard or just the fraction number? my question comes because I think that 1/2 cup of almond flour is too little to make a 9 inch pan of brownies…

Delores, Sorry for the confusion with the À that appeared in the recipe. I have updated the recipe so that is not included. The recipe is correct that only 1/2 cup Almond Meal and 2 Tb of Cornstarch is used in this recipe. Brownies do not need a lot of flour in them. Enjoy!

Evaporated Cane Juice is simply a less refined sugar than white sugar, similar to turbinado sugar or “Sugar in the Raw” if you’re familiar with either of those. White sugar will work just fine in this recipe.

I love this recipe!
To make awesome coconut brownies I simply make a few changes. First
I add one more egg, replace the vanilla with coconut extract or add them both, add 1/2 cup organic coconut, 1/4 cup organic dried coconut milk and substitute 2 tablespoons ground chia seed for corn starch.(more nutrition for my family) Then, since the pan is already greased, I sprinkle the bottom with coconut before adding the batter and bake as indicated above. These brownies are moist, delicate and full flavored. I love you Bob’s Red Mill.

Hi, Can you please tell me the difference between almond meal and almond flour? Is one just ground finer? Are they interchangeable?

There really isn’t a difference. In theory, almond flour would be more finely ground, but that’s not often the case. It’s hard to grind almonds too finely without getting almond butter. I often hear that our brand is one of the finest ground almond meals around. They should be interchangeable in nearly all situations.

How much regular sugar + water to make the equivalent of 1 cup of evaporated cane sugar used in this recipe? Thank you!

Evaporated cane sugar can be replaced with regular sugar. No need to add extra water. 1 cup evaporated cane sugar = 1 cup of sugar
