I combine hazelnut meal with asiago cheese and use as a coating for chicken strips. Almond meal and parmesan are an equally delicious coating. I added hazelnut meal to our whole grain Hazelnut Espresso Coffee Cake yesterday (with a cocoa swirl, my own recipe). When making nut flavored cupcakes I’ll add two tablespoons of almond or hazelnut meal to the batter, along with either almond extract or hazelnut liqueur. I used the almond meal to make my own almond paste for Christmas cookies. I add both to streusel toppings for muffins, along with chopped nuts. Macarons, cakes, pie crusts, and so much more! Yum!
