Every kitchen needs an assortment of brushes. Use round brushes to get into corners when greasing pans or to go around the edges of pans, especially small muffin cups. The one- and two-inch brushes can be used to grease pans too or to "sweep" flour under dough and pastry to prevent it from sticking to the work surface. The one-inch brush is just the right size to glaze rolls, small pastries and breadsticks. Use the two-inch brush for large loaves.
